Pea Pesto
A fresh, vibrant pesto made with frozen peas, basil, and pine nuts. Ready in minutes and perfect tossed through pasta.
Pea Pesto

Ingredients
- 100g frozen peas
- 1 clove garlic (peeled)
- 2 sprigs basil
- 30g pine nuts
- 40g Parmesan
- Extra virgin olive oil
Method
- Peel the garlic1 clove garlic (peeled) and place in a blender with the peas100g frozen peas and a pinch of sea salt. Tear in the basil2 sprigs basil leaves and add the pine nuts30g pine nuts.
- Blend to whatever texture you like. Chunky is good.
- Finely grate in the Parmesan40g Parmesan and add about 2 tbsp of extra virgin olive oilExtra virgin olive oil, enough to give you a spoonable consistency. Mix and season with salt and freshly ground black pepper.
- Toss with pasta, loosening with a few splashes of cooking water.
- Transfer to plates and finish with a drizzle of extra virgin olive oilExtra virgin olive oil and an extra grating of Parmesan40g Parmesan, if you like.
